Spinach: 2 – 3 large handfuls (fresh washed)
Apple: 1 small (chopped)
Avocado: 1 (sliced)
Pitted Jujube Fruit: 8 (cut in halves)
Crunchy Jujube slices: A handful (crushed into croutons)
Lemon juice: 1/2 lemon
Olive Oil: 2 – 3 tbsp.
Salt, Pepper, Basil or Oregano, fresh or dried: A dash
Prepare all salad ingredients and add to salad bowl.
In separate dish, whisk together dressing ingredients using a fork and pour over salad.
Mix well, and chop salad if desired.
Sprinkle crunchy jujube croutons right before serving. Enjoy!
