Red Date Muffins

If you love baking muffins or eating muffins, try these red date muffins which are vegan and packed with nutrients.


  1. Boil the pitted jujube fruit to make red date puree.
  2. Combine puree with coconut oil, water and dark brown sugar.
  3. Add self raising flour and baking powder.
  4. Then add all other ingredients:
    1. Logan (soaked dried logan and cut into small pieces), or use raisins instead
    2. Toasted walnut
    3. Soaked goji
  5. Garnish with halved pitted soaked red date.
  6. Bake for around 22 minutes.
