This delicious cheesy dip is super creamy and flavoursome, and perfect for those lazy days on the couch.
Recipe: Simple Vegan Cashew Cheese Dip - GF & Vegan
Ingredients
- 1 cup of soaked cashews (ideally placed in water and soaked overnight, if not 2 hours in warm water will still work)
- ¼ cup of water
- 1 tsp cider vinegar
- 1.5 tbsp nutritional yeast
- ½ juice of a lemon
- 1 clove of garlic or 1 tbsp garlic powder
- ¾ tsp salt
- ½ tsp black pepper
To alternate flavours, you can add either add 1 tbsp smoked paprika for a nacho cheese style dip. (You could also add 1/2 tsp chilli powder to give it a kick!)
Or you could add 1 tbsp mixed Italian herbs for a creamy herby version.
Method
- Place cashews and all other ingredients in a high-speed blender or food processor.
- Blitz until smooth (You may need to continually add water, you can open/look and judge as you go along).
- Once the cashews are blended into a smooth thick paste with no bits- decant into pot.
- You can either place in fridge where it will firm up or use as a creamy dip/spread.
- Great for dunking Seaweed Crisps into! Also works well as a sandwich spread or filler.
