Enjoy this tasty and wholesome home-made red dates ice cream this summer!
Recipe: Red Dates Gelato - GF, DF, VG
Makes 6 servings
Ingredients:
- 2 cups chopped jujubes / red dates (seeds removed)
- 2 tablespoons ghee or butter substitute
- 2 teaspoons lemon juice
- 350 grams full-fat coconut milk
- 1 cup almond, cashew or hemp milk
- 2 tablespoons coconut sugar
- 1 tablespoon vanilla extract
- big pinch of fine-grain sea salt
Method:
- In a saucepan over medium-low heat, combine the jujubes, ghee or butter substitute, and lemon juice. Cover and cook for about 10 minutes.
- Put the cooked jujubes and the rest of the ingredients into the blender and puree.
- Freeze for an hour or refrigerate until cold.
- Pour into the ice cream machine per manufacturer’s instructions.
- Eat right away or freeze until hard for pretty scoops.
- When frozen solid allow the ice cream to thaw for 20 minutes, or until scoopable.
Ps: Sprinkle some jujube sprinkles or jujube crisps on top when serving for a fun crunch!
