Recipe: Red Date and Pumpkin Seed Flapjacks - GF & Vegan

Love flapjacks? These delicious Red Date and Pumpkin Seed Flapjacks are easy to make and offer a wholesome snack on the go. 

Recipe: Red Date and Pumpkin Seed Flapjacks - GF & Vegan

Ingredients

  • 140g dairy-free spread
  • 140g soft light brown sugar
  • 2 tbsp golden syrup
  • 175g rolled oats
  • 75g chopped pumpkin seeds
  • 75g chopped soft Red Dates

Method

  1. Pre-heat oven to 160C/140C fan
  2. Line a 20cm baking tin with baking parchment
  3. Melt the dairy free spread, sugar and syrup in a saucepan.
  4. Remove from the heat and tip in the oats, chopped pumpkin seeds and soft Red Dates.
  5. Transfer the mix to the baking tin, and spread evenly using the back of a spoon.
  6. Bake for 30 mins, until lightly golden and crisp round the edges.
  7. Let it cool before slicing into squares
