Love flapjacks? These delicious Red Date and Pumpkin Seed Flapjacks are easy to make and offer a wholesome snack on the go.
Recipe: Red Date and Pumpkin Seed Flapjacks - GF & Vegan
Ingredients
- 140g dairy-free spread
- 140g soft light brown sugar
- 2 tbsp golden syrup
- 175g rolled oats
- 75g chopped pumpkin seeds
- 75g chopped soft Red Dates
Method
- Pre-heat oven to 160C/140C fan
- Line a 20cm baking tin with baking parchment
- Melt the dairy free spread, sugar and syrup in a saucepan.
- Remove from the heat and tip in the oats, chopped pumpkin seeds and soft Red Dates.
- Transfer the mix to the baking tin, and spread evenly using the back of a spoon.
- Bake for 30 mins, until lightly golden and crisp round the edges.
- Let it cool before slicing into squares
