Recipe: Mexican Chopped Salad
1 medium head romaine lettuce chopped
1 medium bell pepper diced
½ medium red onion diced
½ medium jicama peeled and diced
1 medium zucchini diced
4 medium tomatoes seeded and diced
2 cups of sweet corn
1 bag of Abakus Roasted Giant Corn
1 ½ cups canned black beans drained and rinsed
½ cup finely chopped cilantro plus whole cilantro leaves for garnish
Ingredients for the dressing
¼ cup fresh lime juice
½ teaspoon cumin
1 clove garlic finely minced
½ teaspoon salt
2 tablespoons canola oil
1. Add all the dressing ingredients and whisk
2. Combine salad ingredients in a large bowl. Stir and add dressing.
3. Garnish with Roasted Giant Corn and cilantro leaves.
The Roasted Giant Corn add a lovely "roasty" flavour and a nice crunchy to your salad. You can use Roasted Giant Corn instead of croutons for any type of salad and soups.
