Recipe: Pumpkin Fudge With Red Dates - GF, DF, Vegan

Autumn is pumpkin season. This lovely pumpkin fudge red dates recipe has an Asian twist, and is steamed for a soft & fluffy texture.
Recipe: Pumpkin Fudge With Red Dates
Ingredients:
- 300g Pumpkin puree
- 220g Gluten-free flour
- 30g Corn mill
- 1.5g dry yeast
- 30g Coconut sugar
- 120g Soy milk
- 12 Pitted red dates (or more if desired(
- 1/4 cup goji berries
- 1/4 cup mixed nuts (recipe uses pumpkin seeds, chopped walnuts, chopped pecans and pine nuts)
Instructions:
- Spray or wipe a 20 cm square pan with oil or non-stick cooking spray
- Soak the pitted red dates and goji berries in water until soft; cut the red dates in halves
- In a large bowl, mix the pumpkin purée, coconut sugar and soy milk. Stir well to combine; then stir in the dry yeast
- In a separate bowl, combine flour and corn mill; Add 1/3 of the dry mixture at a time into the wet, stirring each until combined
- Cover with plastic wrap, and let the batter rise for 40-45 minutes or until 1.5 times in volume
- Stir the batter gently and add in the mixed nuts
- Pour into prepared pan, and let it rise for another 10 minutes, then sprinkle on top the red dates and goji berries
- Place the pan on a steaming rack in a pot filled with water; heat on medium heat, steaming for 30-40 minutes, or until the toothpick inserted into center comes out clean 🥧
- Turn off the heat, keeping the lid covered for additional 5 minutes
- Take it out, and cool completely
- Enjoy!
