This lovely gluten-free and vegan jujube fruit cake is made of wholesome ingredients and super tasty.
Recipe: Healthy Jujube Fruit Cake - GF, DF, Vegan
Ingredients
Dry mix
- Dry mix
- 1.5 cup gluten-free flour
- 0.5 cup almond flour
- 2 tbsp mesquite powder
- 1 tsp salt
- 1.5 baking powder
- 1 cup pitted jujube fruit
Wet mix
- 1 cup sweet almond milk
- 1 cup olive oil or avocado oil
- 1/3 cup coconut nectar
Method
- Preheat oven into 180 C
- Pour almond milk over the jujube fruits and soak for 2 hours
- Mix dry ingredients into large bowl
- Mix the wet ingredients in another bowl and add to the dry ingredients until well combined.
- Place the jujube fruits into the batter. Pour into baking pan.
- Bake for 40 minutes or until the top is golden brown.
- Enjoy hot or cold.
