Recipe: Banana Blossom Vegan Fish and Chips

- banana blossom
- dried mushrooms
- flaked nori sheets
- abakus seaweed crisps
- vegan beer batter
- tartare sauce
- pea purée (alternatively edamame puree)
- Marinate the banana blossom in a hot stock made with dried mushrooms, flaked nori sheets and blended seaweed crisps.
- Leave to develop for 24 hours.
- Coated it in flour by dipping it into a flour, water and vegan beer batter.
- Served with tartare sauce and pea purée. If you want to give it a twist, soak your dried edamame beans it boiling water for 15 minutes, then smash them up and season with salt).
