Recipe: Banana Blossom Vegan Fish and Chips

  • banana blossom
  • dried mushrooms
  • flaked nori sheets
  • abakus seaweed crisps
  • flour
  • vegan beer batter
  • tartare sauce
  • pea purée (alternatively edamame puree)


  1. Marinate the banana blossom in a hot stock made with dried mushrooms, flaked nori sheets and blended seaweed crisps.
  2. Leave to develop for 24 hours. 
  3. Coated it in flour by dipping it into a flour, water and vegan beer batter.
  4. Served with tartare sauce and pea purée. If you want to give it a twist, soak your dried edamame beans it boiling water for 15 minutes, then smash them up and season with salt). 
  5. Enjoy!
