We’ve been talking a lot about real comfort food here at Abakus: dishes that’ll boost your energy levels and immune system instead of making you feel heavy and sluggish. This vegan stir fry is quick to prepare, but packed with antioxidants, fibre and vitamins.
Ingredients
1 medium head broccoli, cut into florets
200g mushrooms, halved
2 cloves garlic, diced
10 jujube fruits, teared
150ml water
1/2 tsp salt (optional)
1 tbsp cooking oil
Method
Heat the oil in a wok. Once hot, sauté the garlic.
Before the garlic browns, add the broccoli florets, mushrooms and finally the jujube fruit. Stir fry briskly on high heat.
Douse with the water, lower heat slightly and let simmer rapidly. While simmering, add a sprinkling of salt.
Continue to stir fry until done. The broccoli should be crunchy and not overcooked.
Serve alone or with wholegrain rice.
