Recipe: Fruit Beans Seeds Salad

This recipe is great for those wishing to swap the nuts with broad beans. 

Ingredients
2 cups romaine lettuce, torn 
1 cup spinach, torn
1 cup small pear (or apple) diced
1 celery stalk, sliced
2 Tbsp dried blueberries (or cranberries or raisins)
2 Tbsp Abakus Roasted Broad Beans
1 Tbsp mixed seeds (e.g. raw pumpkin seeds and raw sunflower seeds)
2 Tbsp olive oil 
2 tsp lemon juice (or apple cider vinegar)
2 tsp chopped fresh parsley
salt and coarse ground black pepper, to taste

Method 
1. Combine all ingredients 
2. Add the olive oil, lemon juice, parsley, seasoning
3. Add Abakus Roasted Broad Beans 
4. Toss and serve

The roasted broad beans offer crunch and a buttery flavour, and make the perfect replacement for nuts (if you are allergic or not a fan). Roasted broad beans (or Fava Beans) are high in plant-based protein and a source of fibre.
